Crumb Cake (Muffins)
A great, simple cake to make – this recipe can be used for jumbo muffins as well! My recipe card says this came from my Aunt Paula. I've been making this cake since I was old enough to turn the oven on. A family favorite!
Ingredients
- 1 cup granulated sugar
- 3/4 cup salted butter
- 2 cups flour
- 1 large egg
- 1 cup milk, sour milk, or buttermilk
- 1 tsp baking soda
- 1 tsp cinnamon
- 1 cup chocolate chips
Instructions
- Preheat oven to 350° and grease pan. This recipe can be used as is for a loaf pan, 8×8 pan, or jumbo muffins. Double the recipe for a 9×13 pan.
- In a medium size bowl use a pastry blender or fork to mix sugar, butter, and flour together. Form a crumbly mixture. Set aside 1 cup of crumb mixture to use for topping. (2 cups for 9×13 pan)
- Mix egg, milk, baking soda, cinnamon together in a separate bowl.
- Add chocolate chips to dry mixture, then add wet ingredients to dry ingredients. Mix by hand until combined.
- Pour mixture into a pan of your choosing and sprinkle set aside crumb mixture on top.
- Loaf Pan or 9×13 pan – bake for 40-50 minutes or until middle is done and top is golden. Insert wooden toothpick into middle to check that the middle is done. Jumbo Muffins – bake for 20-25 minutes or until top springs back when pressed lightly, top will be golden. Don't press on the crumb mixture to test the top – it won't spring back like the actual cake base will.
Notes
Choose whichever milk you have handy – this is a great recipe to use up milk that is about to go bad or has already gone sour. Buttermilk or regular milk work just fine as well.
Don’t over mix the batter – just stir gently until wet and dry ingredients are incorporated evenly.
It may take longer than 40-50 minutes for the middle to get completely done depending on your pan. A loaf pan takes longer to bake through than the other size pans or muffins. Start checking on it around 30 minutes for all pans and around 18 minutes for muffins. Continue to let it bake, checking every couple of minutes until completely done.
