Beef White Chili
A Jacobson family classic – Mama Jackie makes this all the time, it's especially good for a big crew of people for cattle work, just double the recipe if needed and throw it in a crock pot!
Ingredients
- 1-2 lb ground beef, browned (1 lb for 4 people, 2 lbs to feed a crew)
- 1 medium onion, finely diced
- 1 tsp garlic powder
- 1 can cream of chicken soup
- 1 cup milk (optional)
- 1-2 cans Great Northern white beans (1 can for 4 people, 2 cans to feed a crew)
- 1 14.5 oz can beef or chicken broth
- 1 10 oz can Rotel
- 1 tsp oregano
- salt & pepper to taste
- 1 cup sour cream
- 1 cup shredded cheddar
- tortilla chips
Instructions
- In a large skillet, brown ground beef, add onion and sauté until translucent.
- Add garlic powder, cream of chicken soup, milk, beans, broth, Rotel, oregano, salt and pepper. Simmer for about 10 minutes to let the flavors come together. You can also put this in a crockpot on low at this point rather than simmering on the stove.
- Just prior to serving, stir in 1 cup of sour cream. Stir until well combined.
- Serve in bowls and top with shredded cheddar and tortilla chips.
- Enjoy!
Notes
Pairs really well with breadsticks or beer bread.
You can double the entire recipe if you have more than 8 people or just add another pound of ground beef and can of beans, but leave the broth portion the same if you have more than 4 but less than 8.
