This recipe is so versatile. You can customize it to use whatever your favorite berry is or add rhubarb for that awesome tangy flavor. The oatmeal crumble is so buttery and good, complimenting the berry filling perfectly.
Berry Crumble Bars
Buttery oatmeal crumble with a fruit filling; these bars are perfect for anytime of day, including breakfast!
Ingredients
Crumble Crust and Topping
- 1 cup butter, softened
- 1 cup sugar
- 1/2 cup brown sugar
- 2 tsp vanilla
- 2 cups flour
- 1 1/2 cups oats, old fashioned
Berry Filling
- 3 cups berries*
- 3/4 cup sugar
- 2 tbsp cornstarch
- 2 tbsp water
Instructions
- Preheat oven to 350°. Grease a 9×13 pan.
- Cream butter and sugars with a stand mixer. Add vanilla and mix well.
- Add flour and oats, mix until a loose crumble forms and ingredients are incorporated.
- Press a little over half of the dough into a greased 9×13 pan and set aside. Leave the rest of the dough in the bowl to be used as crumble topping later.
Berry Filling
- Add berries and sugar to a medium saucepan over medium heat. Bring berries to a boil.
- In a small bowl, mix cornstarch and water together. Slowly pour into boiling berries, stirring constantly. Let the berries cook until thickened into paste consistency.
- Pour berry filling over the crumble dough in the pan and spread evenly. Sprinkle the rest of the crumble dough on top of the filling.
- Bake for 30-35 minutes or until the top is golden. Let cool and enjoy!
Notes
* I usually use frozen berries for this. I’ve done blueberry, raspberry, strawberry and the berry medley mix. They all turn out well. I have also done 1 cup fresh rhubarb with 2 cups strawberries. This was fantastic! Fresh berries work just fine as well. Get creative!
* If your berry mixture isn’t as thick as you’d like, add another round of cornstarch/water.
