Deep Dish Pizza
Baked in a cast iron skillet, deep dish pizza that is better than Pizza Hut's!
Ingredients
- 3/4 tsp active dry yeast
- 1 1/2 cups warm water
- 3 cups bread flour
- 2 tsp salt
- 4 tbsp olive oil
Instructions
- In a medium bowl, add yeast to the warm water and let it sit for a few minutes.
- Add flour and salt to the water and yeast mixture and stir it together until just combined. You want to dough to have a shaggy look.
- Grease a bowl or Tupperware and spread the dough out in it. I have some larger Tupperware I use and it works great. I put the lid loosely on top and set in a warm place for 4-6 hours.
- After the dough has risen 4-6 hours, divide it into as many pieces as you have skillets.
- You can prepare one or two cast iron skillets for your crust to rise in the second time. If you have smaller pans like me, use a couple. If you have a large cast iron skillet, like a 20 inch – one skillet works. You're going for the equivalent space a 20 inch skillet would give you.
- Put 2 Tbsp of olive oil in each skillet. This seems like a lot of oil but you will need plenty. Place your dough in the skillet and fold it over a few times to completely coat with oil before spreading it out as well as you can.
- Place the dough in a warm place to rise another 2 hours.
- Preheat oven to 500°.
- After the dough has risen sufficiently (the dough should be spread across the pan), gently put your toppings on. You want to keep these fairly light so the dough stays puffed up and tall. I usually use pizza sauce, pepperoni, and mozzarella.
- Bake at 500° for about 15 minutes. Check often, once toppings are browned, use a fork to lift the crust out of the pan and make sure it's done.
