The Best Pancakes! That is, if you’re like me and aren’t a big fan of fluffy pancakes because they get soggy with syrup. These are similar to crepes; soft, tender and thin. Eat them doused in maple syrup, fruit jam or just with a little butter and sugar. These are our favorite pancakes and so simple to whip up.
French Pancakes
A twist on traditional pancakes, these are similar to crepes and so so good!
Ingredients
- 3 eggs, beaten
- 1 tsp sugar
- 1 cup milk
- 1/2 cup flour
Instructions
- Preheat your griddle to 350℉ or put a skillet on the stove over medium heat while you're mixing up the pancake batter. Spray the griddle or skillet with cooking spray.
- Add 3 eggs to a small bowl and beat well. Add the sugar and stir.
- Add 1/2 cup of milk and stir well again, slowly add the flour; beating well with a whisk while you add it. Continue whisking until the flour is absorbed and batter is fairly smooth.
- Add the remaining 1/2 cup of milk and mix well. Spray the griddle with cooking spray.
- Fry the pancakes just like you would regular pancakes – flip when one side is golden brown. The batter is fairly thin, so I usually pour a layer in the griddle and let it spread out to cover the entire space, then cut them into the size I want after cooking.
- Smother them in your favorite toppings and enjoy!
