Scotcheroos are gooey, wonderful, deliciousness. Peanut butter, chocolate, butterscotch, crispy cereal… what more could a person ask for? I have a secret ingredient that sets my recipe apart from the other recipes out there – it keeps them gooey and chewy and they don’t harden even after a couple days…if they last that long.

G3 Ranch Scotcheroos
A favorite for any family gathering, these never last more than one meal no matter how big of a pan I make!
Ingredients
Bars
- 6 cups Rice Krispies or Rice Chex cereal
- 1 cup light corn syrup
- 1 cup sugar
- 3 tbsp butter
- 1 1/2 cups peanut butter
Frosting
- 1 cup semi sweet chocolate chips
- 1 cup butterscotch chips
- 1/4 cup peanut butter
- 1 tsp vanilla
Instructions
- In a large bowl, measure out Rice Krispies or Chex cereal. Grease a 9×13 pan.
- In a medium saucepan, combine the corn syrup & sugar over medium heat. Bring to a boil, then remove from heat and stir in 1 1/2 cup peanut butter and 3 tbsp butter. Mix well while the butters melt in.
- Pour peanut butter mixture over cereal and stir until cereal is evenly coated. Press the cereal mixture into a greased 9×13 pan and let cool.
- While the bars are cooling, add chocolate chips, butterscotch chips and peanut butter to a microwave safe bowl. Microwave using 30 second increments, stirring between. Continue until the chips are thoroughly melted and mixed together then add vanilla and stir well. Pour frosting on top of bars and let cool.
