Meatloaf
A delicious, classic meatloaf – can't beat it on a cold winter day!
Ingredients
- 2 lbs ground beef
- 1 sleeve Saltine or Club crackers, crushed very fine
- 1 egg, room temp
- 1 medium yellow onion, minced
- 1 medium green pepper, minced
- 1/4 cup milk
- 2 tsp garlic powder
- 1 tsp salt
- 1/2 tsp pepper
Instructions
- Preheat the oven to 350℉.
- Set the ground beef on the counter for a half hour, this helps it mix well later. While the meat is warming up, prep the onion and bell pepper.
- Mince the onion and pepper very finely, unless you want a lot of texture in your meatloaf.
- Crush up the crackers very fine, you do not want any chunks.
- Whisk the milk, egg, garlic powder, salt and pepper together.
- Place the ground beef in a large bowl, then add the saltines and wet mixture.
- Add the onions and bell pepper and mix until well combined, do not over mix.
- Form the meat into an oblong loaf and place it on a tin foil covered baking sheet. I like to use one with a lip around the edges so any liquid doesn't run off and make a mess in the oven.
- Bake the loaf uncovered for one hour. Smother the loaf in ketchup and then bake for another 30 minutes.
- Remove the loaf from the oven, cover it in tin foil and let it rest for about 20 minutes before serving.
- Ovens can cook at different rates, so watch the meatloaf carefully. If the meatloaf is getting too brown, reduce the temperature by 15 degrees and cover the top loosely in tin foil to complete baking.
