One Pot Creamy Sausage Pasta

This is pretty much just a pot of my family’s favorite ingredients – who doesn’t love sausage, onions, garlic, pasta, cream and cheese? Throw in some Rotel and chicken broth for extra flavor and you can’t go wrong! This cooks up in just a couple minutes and only dirties one pot. So nice!

Ingredients
  

  • 1 lb sausage, your choice
  • 1/2 medium onion
  • 1 TBSP minced garlic
  • 2 cups chicken broth
  • 4 cups egg noodles
  • 1 can Rotel
  • 1/2 cup heavy cream
  • 1 cup shredded cheese, your choice
  • season to taste – black pepper, onion powder, Italian seasoning, red pepper flakes

Instructions
 

  • Brown sausage, add onion and garlic, sauté until onions are translucent.
  • Pour in chicken broth and add Rotel (with liquid). Add noodles and simmer for a couple minutes, stirring frequently.
  • Add your seasonings of choice. I used a sprinkle of black pepper, Italian seasoning, onion powder and some red pepper flakes. The red pepper flakes will give it some heat, it doesn't take much.
  • When noodles are done, add cream and cheese. Stir together and let it simmer for a minute or two longer, the sauce will start to thicken up.

Notes

The best thing about recipes like these is, anything goes! The ingredients don’t have to be measured exactly and it’s still going to turn out yummy! 
We have a pork/venison ground sausage that we use in a lot of different dishes. That’s what I used here but you can use whatever you prefer or have on hand – Jimmy Dean or sliced up ring sausage, chicken or turkey sausage, whatever you want. 
I like to use egg noodles because they cook much more quickly than other pasta noodles. Use whatever you have, if you use a smaller noodle like elbow macaroni just decrease the amount of noodles slightly (4 cups of dry elbow macaroni makes a large amount of cooked pasta) and simmer a few minutes longer until the pasta is cooked. 
I used Colby Jack cheese, but cheddar would be great too or any variety that’s similar.
 If you’re looking to incorporate a veggie, throw in a few handfuls of fresh spinach.
