I can prep once for two different meals? Count me in! This recipe for Stuffed Peppers doubles the next night as a delicious filling for burritos. We’re always looking for ways to up our veggie intake and use up G3 Ranch Beef ground beef. This recipe is a winner!
Stuffed Peppers & Burritos
A one prep, two meal recipe to make Stuffed Peppers then use the leftover filling for Burritos the next day.
Ingredients
Stuffed Peppers
- 4-5 bell peppers, any color
- 2 lbs ground beef
- 2 tbsp olive oil
- 1 medium onion
- 1 10 oz can Rotel
- 1 1/4 cup chicken broth
- 2 tsp Worcestershire sauce
- 3/4 cup white rice
- 1 tbsp taco seasoning
- 3 tsp brown sugar
- 1 cup shredded Mexican cheese, divided
- salt & pepper to taste
Additional Ingredients for Burritos
- 3-4 burrito size tortillas
- 1/2 cup shredded Mexican cheese
- 3/4 cup black beans, rinsed (optional)
For Serving both Stuffed Peppers and Burritos
- sour cream
- salsa
Instructions
Stuffed Peppers
- Preheat oven to 400℉. Prep bell peppers by cutting the tops off and removing the seeds and insides. Rub the outside of the peppers with a little olive oil and arrange them snugly in an oven safe pan. Sprinkle the insides of the peppers with salt and pepper, to taste.
- Remove the stems from the tops of the peppers and then dice them up. Dice up the onion.
- In a medium pan, brown ground beef and add diced peppers and onions. Once the ground beef is cooked thoroughly, add the chicken broth, Rotel, rice, taco seasoning, brown sugar, and additional salt and pepper. Stir it together then reduce heat to medium low, cover and let simmer for about 20 minutes.
- While the rice is simmering, place the peppers in the oven and let them roast for 20 minutes.
- Once the rice is done, add 1/2 cup shredded cheese and stir until melted.
- Remove the peppers from the oven, and spoon the rice mixture into each pepper until it is full. Sprinkle remaining cheese on top and place back into the oven for ten minutes while cheese melts. Top with sour cream and salsa, then enjoy!
- Place leftover filling into a container and chill for burritos tomorrow.
Burritos
- Warm up the leftover stuffed peppers filling in the microwave. If you are going to add beans, go ahead and add them before microwaving so that the beans heat up.
- Microwave your tortillas for a few seconds so that they are soft and flexible.
- Spoon filling onto the tortillas, making them as large or small as you'd like.
- Enjoy as is, or pan fry them in some olive oil for a crispy shell. Top your burrito with sour cream and salsa and enjoy!
Notes
If you don’t want leftover filling for burritos or you have a larger family, prep 8 peppers and fill them instead.
