Crockpot Philly Cheesesteak Sloppy Joes

These are a delicious, easy way to level up traditional sloppy joes. Same concept, different flavors. This recipe can be made in a crockpot or a skillet on the stove. I love to make it at lunch time and let it simmer in the crockpot all day for supper. I made bread and buns yesterday, whenever I do that I’m always looking for a way to use up the fresh buns within a day or two of making them. It helps tremendously with meal planning to just have a type of food picked out for two days a week – and sandwiches of any kind are a big hit around here!

Crockpot Philly Cheesesteak Sloppy Joes

Sloppy Joes – but philly cheesesteak style!

Ingredients
  

  • 1-2 lbs ground beef*
  • 1 green bell pepper, diced*
  • 1 small yellow onion, diced*
  • 1 6 oz can mushrooms, diced (or fresh)
  • 1/2 cup beef broth
  • 2 tbsp butter
  • 1/4 cup beef broth + 2 tbsp cornstarch
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 6 slices provolone cheese*
  • buns of your choosing

Instructions
 

  • Brown the ground beef.
  • Prep the bell pepper, onion and mushrooms by dicing them up.
  • In a crockpot, add the ground beef, diced peppers, onion, mushrooms and butter. Pour in the 1/2 cup of beef broth.
  • Put two tablespoons of cornstarch into a small bowl, add 1/4 cup beef broth and stir it well until it is smooth consistency. Pour it into the crockpot and mix everything well.
  • Add the ketchup, Worcestershire sauce and seasonings to the crockpot and stir again.
  • Cook on low for 3-4 hours. Right before serving add the sliced cheese, let it melt then stir well.
  • Serve it up on buns and enjoy!

Notes

When I made this recipe to photograph for the blog – I just used what I had on hand at the time. 
If you just want a batch for a couple people, use 1 lb of ground beef. We’re big eaters here, so if you’re feeding a family of 4 or more, go ahead and use two lbs of ground beef. 
I used a red bell pepper rather than green, a purple onion rather than yellow, and half provolone and half pepper jack cheese. It was fantastic! It will be good no matter what you use! 
Skillet Directions:
Brown ground beef, add butter, onion, pepper, mushrooms and sauté for a few minutes. Add the beef broth, cornstarch/broth, Worcestershire, ketchup and seasonings. Let the mixture simmer for a few minutes to thicken. Remove from heat and add the cheese, let it melt and stir it in well. Serve it up on your buns. 
Sliced steak like a real Philly cheesesteak would also be excellent in this recipe!
