Crockpot Cheesy Ham & Potato Casserole
Creamy, cheesy, comfort food!
Equipment
- 1 crockpot
Ingredients
- 4-5 medium large potatoes (Red or Yukon Gold)**
- 1/2 onion, finely diced
- 1 tbsp minced garlic
- 2 cups ham, bite size chunks
- 1 cup chicken broth
- 1 cup sour cream
- 1/3 cup shredded parmesan cheese
- 1 cup shredded cheddar cheese
- 1/2 tbsp onion powder
- 1/2 tbsp garlic powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/3 cup heavy cream
Instructions
- Spray your crockpot with cooking spray.
- Prep your potatoes, you can peel them or leave the skins – whichever you prefer. Slice into pieces 1/4 inch thick. Place the potatoes in the crockpot.
- Prep the onions and garlic and place in the crockpot with the potatoes.
- Dice up the ham and place in the crockpot.
- In a small bowl, mix together chicken broth, sour cream, parmesan, cheddar and seasonings. Pour the mixture over the potatoes in the crockpot and mix everything well.
- Cook on high for 2-3 hours or low for 5-6 hours, check it occasionally so that the potatoes don't overcook. Right before serving, add the cream and mix well.
- Serve and enjoy!
Notes
**Frozen hash browns would also work well.Â
Grated parmesan works just as well as shredded – it just gives it a little different texture.Â
