Crockpot Cheesy Ham & Potato Casserole

  • 1 crockpot

Ingredients
  

  • 4-5 medium large potatoes (Red or Yukon Gold)**
  • 1/2 onion, finely diced
  • 1 tbsp minced garlic
  • 2 cups ham, bite size chunks
  • 1 cup chicken broth
  • 1 cup sour cream
  • 1/3 cup shredded parmesan cheese
  • 1 cup shredded cheddar cheese
  • 1/2 tbsp onion powder
  • 1/2 tbsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/3 cup heavy cream

Instructions
 

  • Spray your crockpot with cooking spray.
  • Prep your potatoes, you can peel them or leave the skins - whichever you prefer. Slice into pieces 1/4 inch thick. Place the potatoes in the crockpot.
  • Prep the onions and garlic and place in the crockpot with the potatoes.
  • Dice up the ham and place in the crockpot.
  • In a small bowl, mix together chicken broth, sour cream, parmesan, cheddar and seasonings. Pour the mixture over the potatoes in the crockpot and mix everything well.
  • Cook on high for 2-3 hours or low for 5-6 hours, check it occasionally so that the potatoes don't overcook. Right before serving, add the cream and mix well.
  • Serve and enjoy!

Notes

**Frozen hash browns would also work well. 
Grated parmesan works just as well as shredded - it just gives it a little different texture.
