Crockpot Cheesy Ham & Potato Casserole

- 4-5 medium large potatoes (Red or Yukon Gold)**
- 1/2 onion, finely diced
- 1 tbsp minced garlic
- 2 cups ham, bite size chunks
- 1 cup chicken broth
- 1 cup sour cream
- 1/3 cup shredded parmesan cheese
- 1 cup shredded cheddar cheese
- 1/2 tbsp onion powder
- 1/2 tbsp garlic powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/3 cup heavy cream
Spray your crockpot with cooking spray.
Prep your potatoes, you can peel them or leave the skins - whichever you prefer. Slice into pieces 1/4 inch thick. Place the potatoes in the crockpot.
Prep the onions and garlic and place in the crockpot with the potatoes.
Dice up the ham and place in the crockpot.
In a small bowl, mix together chicken broth, sour cream, parmesan, cheddar and seasonings. Pour the mixture over the potatoes in the crockpot and mix everything well.
Cook on high for 2-3 hours or low for 5-6 hours, check it occasionally so that the potatoes don't overcook. Right before serving, add the cream and mix well.
Serve and enjoy!
**Frozen hash browns would also work well.
Grated parmesan works just as well as shredded - it just gives it a little different texture.
