A little break in the hot summer weather called for some cheeseburger soup. It’s cool, breezy and cloudy today – a perfect day for some soup and breadsticks. I love making up soups and but it has to be a cooler day to really enjoy them. This soup is rich, creamy and delicious!
G3 Ranch Cheeseburger Soup
Creamy, cheesy, rich and delicious – you can't go wrong with this soup!
Ingredients
- 1 lb G3 Ranch ground beef, browned
- 2 tbsp olive oil
- 1 tbsp minced garlic
- 1 cup diced carrots
- 1 cup diced onion
- 1/2 cup diced celery
- 3 cups diced potatoes, bite size pieces
- 4 cups chicken broth
- 1/3 cup heavy cream
- 1 cup cheddar cheese
- to taste: garlic powder, onion powder, salt, pepper, parsley
- 1/2 cup corn, optional
Instructions
- Prep carrots, onion, celery, and potatoes.
- In a large saucepan or soup kettle, brown ground beef in olive oil.
- Add minced garlic, carrots, onion and celery to ground beef while it browns.
- When the ground beef is done, add chicken broth and potatoes. Add seasonings to taste, I use a sprinkle of each. Add corn (optional).
- Cover your pot and simmer on low until the potatoes are done, stirring every few minutes. Be sure not to overcook the potatoes or they'll fall apart.
- When the potatoes are cooked, turn burner off and add cream and cheese. Stir until the cheese is melted and incorporated into the broth.
- Serve and enjoy!
