G3 Ranch Cheeseburger Soup

Ingredients
  

  • 1 lb G3 Ranch ground beef, browned
  • 2 tbsp olive oil
  • 1 tbsp minced garlic
  • 1 cup diced carrots
  • 1 cup diced onion
  • 1/2 cup diced celery
  • 3 cups diced potatoes, bite size pieces
  • 4 cups chicken broth
  • 1/3 cup heavy cream
  • 1 cup cheddar cheese
  • to taste: garlic powder, onion powder, salt, pepper, parsley
  • 1/2 cup corn, optional

Instructions
 

  • Prep carrots, onion, celery, and potatoes.
  • In a large saucepan or soup kettle, brown ground beef in olive oil.
  • Add minced garlic, carrots, onion and celery to ground beef while it browns.
  • When the ground beef is done, add chicken broth and potatoes. Add seasonings to taste, I use a sprinkle of each. Add corn (optional).
  • Cover your pot and simmer on low until the potatoes are done, stirring every few minutes. Be sure not to overcook the potatoes or they'll fall apart.
  • When the potatoes are cooked, turn burner off and add cream and cheese. Stir until the cheese is melted and incorporated into the broth.
  • Serve and enjoy!
