G3 Ranch Cheeseburger Soup

- 1 lb G3 Ranch ground beef, browned
- 2 tbsp olive oil
- 1 tbsp minced garlic
- 1 cup diced carrots
- 1 cup diced onion
- 1/2 cup diced celery
- 3 cups diced potatoes, bite size pieces
- 4 cups chicken broth
- 1/3 cup heavy cream
- 1 cup cheddar cheese
- to taste: garlic powder, onion powder, salt, pepper, parsley
- 1/2 cup corn, optional
Prep carrots, onion, celery, and potatoes.
In a large saucepan or soup kettle, brown ground beef in olive oil.
Add minced garlic, carrots, onion and celery to ground beef while it browns.
When the ground beef is done, add chicken broth and potatoes. Add seasonings to taste, I use a sprinkle of each. Add corn (optional).
Cover your pot and simmer on low until the potatoes are done, stirring every few minutes. Be sure not to overcook the potatoes or they'll fall apart.
When the potatoes are cooked, turn burner off and add cream and cheese. Stir until the cheese is melted and incorporated into the broth.
