If you love pasta, but don’t like how heavy most Alfredo sauces are or you’re just looking for something different – this is the pasta recipe for you! The flavors are awesome, the sauce is made mostly from roasted red peppers and it’s just a really wonderful dish to mix things up a bit. It’s super quick and easy to make.
Roasted Red Pepper Shrimp Pasta
My favorite pasta – it's light and different and so yummy!
Ingredients
- 8 oz pasta (half package penne or fettuccini)
- 1 lb shrimp, thawed
- 16 oz jar roasted red peppers
- 3 tbsp butter
- 3 tbsp minced garlic
- 1/2 tbsp paprika
- salt & ground cayenne pepper – to taste
- 3/4 cup half & half
- 1/2 cup grated parmesan cheese
Instructions
- Fill a kettle with water, add 1/2 TBSP of salt and cook pasta according to package instructions. Drain pasta and set aside when it's done cooking.
- Add peppers with the liquid to a blender or food processor and blend until smooth.
- In a medium skillet, add butter, paprika, cayenne pepper, salt and garlic. Sauté shrimp, being careful not to overcook them. Remove the shrimp from the pan and set aside.
- Add the red pepper sauce to the pan, cover and let it simmer for 10 minutes over low heat. Add the half & half and parmesan and cook for 1 minute. Return the shrimp to the pan, add the noodles, and mix everything together.
- Serve and enjoy!
