Roasted Red Pepper Shrimp Pasta
My favorite pasta - it's light and different and so yummy!

- 8 oz pasta (half package penne or fettuccini)
- 1 lb shrimp, thawed
- 16 oz jar roasted red peppers
- 3 tbsp butter
- 3 tbsp minced garlic
- 1/2 tbsp paprika
- salt & ground cayenne pepper - to taste
- 3/4 cup half & half
- 1/2 cup grated parmesan cheese
Fill a kettle with water, add 1/2 TBSP of salt and cook pasta according to package instructions. Drain pasta and set aside when it's done cooking.
Add peppers with the liquid to a blender or food processor and blend until smooth.
In a medium skillet, add butter, paprika, cayenne pepper, salt and garlic. Sauté shrimp, being careful not to overcook them. Remove the shrimp from the pan and set aside.
Add the red pepper sauce to the pan, cover and let it simmer for 10 minutes over low heat. Add the half & half and parmesan and cook for 1 minute. Return the shrimp to the pan, add the noodles, and mix everything together.
