Roasted Red Pepper Shrimp Pasta

My favorite pasta - it's light and different and so yummy!

Ingredients
  

  • 8 oz pasta (half package penne or fettuccini)
  • 1 lb shrimp, thawed
  • 16 oz jar roasted red peppers
  • 3 tbsp butter
  • 3 tbsp minced garlic
  • 1/2 tbsp paprika
  • salt & ground cayenne pepper - to taste
  • 3/4 cup half & half
  • 1/2 cup grated parmesan cheese

Instructions
 

  • Fill a kettle with water, add 1/2 TBSP of salt and cook pasta according to package instructions. Drain pasta and set aside when it's done cooking.
  • Add peppers with the liquid to a blender or food processor and blend until smooth.
  • In a medium skillet, add butter, paprika, cayenne pepper, salt and garlic. Sauté shrimp, being careful not to overcook them. Remove the shrimp from the pan and set aside.
  • Add the red pepper sauce to the pan, cover and let it simmer for 10 minutes over low heat. Add the half & half and parmesan and cook for 1 minute. Return the shrimp to the pan, add the noodles, and mix everything together.
  • Serve and enjoy!
