Taco Rice Skillet
Quick and easy to make, a great weeknight meal!
Ingredients
- 1 lb ground beef
- 1/2 onion, diced
- 1 cup broth (chicken or beef)
- 1 10 oz can Rotel
- 1/2 cup salsa
- 2 tbsp taco seasoning
- 1 cup rice
- 1 tsp garlic powder
- 1 cup corn
- 1 cup shredded cheddar cheese
- 1 can black beans (optional)
- salt & pepper to taste
Instructions
- In a large skillet, brown ground beef, add the diced onion and sauté until translucent.
- Add all remaining ingredients except cheddar cheese. Stir until well combined, cover and bring to a simmer. Let the skillet simmer for 10-15 minutes or until rice is cooked.
- Stir well, top with shredded cheddar, cover the skillet until the cheese is melted and serve. Enjoy!
