Taco Rice Skillet

Quick and easy to make, a great weeknight meal!

Ingredients
  

  • 1 lb ground beef
  • 1/2 onion, diced
  • 1 cup broth (chicken or beef)
  • 1 10 oz can Rotel
  • 1/2 cup salsa
  • 2 tbsp taco seasoning
  • 1 cup rice
  • 1 tsp garlic powder
  • 1 cup corn
  • 1 cup shredded cheddar cheese
  • 1 can black beans (optional)
  • salt & pepper to taste

Instructions
 

  • In a large skillet, brown ground beef, add the diced onion and sauté until translucent.
  • Add all remaining ingredients except cheddar cheese. Stir until well combined, cover and bring to a simmer. Let the skillet simmer for 10-15 minutes or until rice is cooked.
  • Stir well, top with shredded cheddar, cover the skillet until the cheese is melted and serve. Enjoy!
