Easy Tortilla Soup

- 1 lb G3 Ranch Ground Beef or chicken breast
- 1 10.5 oz can fiesta nacho cheese soup
- 1 10.5 oz can cream of chicken soup
- 1 10.5 oz can chicken broth
- 1 10.5 oz can salsa
- 1 10.5 oz can milk
- Toppings - Doritos, cheddar cheese, sour cream, green onion, etc.
In a large skillet or sauce pan, brown ground beef or bite size chunks of chicken breast on medium heat.
Add both soups, and then using the empty cans to measure, add chicken broth, salsa and milk.
Stir over medium heat until well combined and then bring to a simmer.
Top with Nacho Cheese Doritos, cheddar cheese and sour cream if you like.
Most people know this soup as chicken tortilla soup, but on a beef cattle ranch we mostly use ground beef and it's awesome. You can use either!
Use your favorite salsa - chunkier salsa results in a chunkier soup, use a smooth textured salsa if you want a smoother soup.
The salsa can also provide some heat to the soup or different flavors. If you want to add heat to the soup and use a mild salsa, add some red pepper flakes or sautéed jalapeños.
We usually top each bowl of soup with crumbled Doritos and cheddar cheese; but onions, sour cream, jalapeños, etc. all make great toppings.
