Easy Tortilla Soup

Add chicken or beef for a quick, hearty weeknight meal!

Ingredients
  

  • 1 lb G3 Ranch Ground Beef or chicken breast
  • 1 10.5 oz can fiesta nacho cheese soup
  • 1 10.5 oz can cream of chicken soup
  • 1 10.5 oz can chicken broth
  • 1 10.5 oz can salsa
  • 1 10.5 oz can milk
  • Toppings - Doritos, cheddar cheese, sour cream, green onion, etc.

Instructions
 

  • In a large skillet or sauce pan, brown ground beef or bite size chunks of chicken breast on medium heat.
  • Add both soups, and then using the empty cans to measure, add chicken broth, salsa and milk.
  • Stir over medium heat until well combined and then bring to a simmer.
  • Top with Nacho Cheese Doritos, cheddar cheese and sour cream if you like.

Notes

Most people know this soup as chicken tortilla soup, but on a beef cattle ranch we mostly use ground beef and it's awesome. You can use either!
Use your favorite salsa - chunkier salsa results in a chunkier soup, use a smooth textured salsa if you want a smoother soup. 
The salsa can also provide some heat to the soup or different flavors. If you want to add heat to the soup and use a mild salsa, add some red pepper flakes or sautéed jalapeños. 
We usually top each bowl of soup with crumbled Doritos and cheddar cheese; but onions, sour cream, jalapeños, etc. all make great toppings.
